Day one of my new Food budget challenge starts with Jambalaya. This time I’m doing a £10 a week challenge to make it more manageable for an average family.

Last day of the £7 a week challenge and I can’t say it’s been easy. I’ve run out of bread and most of the other ingredients. Today I have Arancini, an Italian dish normally made from leftover risotto.

Today for dinner I cooked a kind of Spanish tortilla using the tinned potatoes. I could have not bothered roasting them first, but I think they are nicer if they have a bit of crunch to them.

I used 1/3 of the leftover rice for dinner tonight, with some tinned peas, carrots and an egg. Not my best ever stir fry dish but with the chinese 5 spice and the soy sauce it was still tasty.

This pasta frittata is a great way to use up the leftover spaghetti, but normally I would have a mixed salad with it

This meal is made from all tinned ingredients as they are much cheaper and can be stored for ages until needed. I used Sardines in tomato sauce as this is the cheapest way to buy fish
