
Ok so time to start the £7 challenge week. After all the over eating at Christmas either I’ll feel better for a week of frugality or hungrier as I’m used to over indulging.
The first meal I make is a simple tomato pasta dish, but I spice it up with some chilli flakes as I don’t add much salt to the dish, but feel free to season more at the end.

Chilli and Tomato Spaghetti
Ingredients
Pinch of dried chilli flakes
Pinch of mixed herbs
1/4 of the onion chopped
1/2 of 400g tin tomatoes
1/2 of tin carrots
1 tablespoon cooking oil
1/2 packet spaghetti (cook the extra for later)
1-2 cloves garlic
Handful of Parsley to garnish
Method
Slice up the onion thinly. Then put the water on to boil for the pasta.
Heat the oil in a pan and add the onion then cook until softened, next add the garlic, herbs and chilli flakes. Cook for about 5 more minutes.
Add the tomatoes and some chopped carrots then simmer for 10 minutes.
Season it now to taste.
When the water has boiled, add the spaghetti and cook following the packet instructions.
Once the pasta is cooked, drain it then add 2/3 to the tomato pasta sauce. The other 1/3 is for a meal later in the week.
Serve Most of this holding back a little for lunch later in the week.
Scatter a little chopped, parsley if you have it.
