Vegan Mac & cheese
Ingredients for mac & cheese:
A few spring onion tops, sliced
Ingredients for the white sauce:
30g vegan parmesan-style cheese
Preheat the oven to 200°C.
Firstly cook the macaroni according to the packet instructions.
Next blend the white sauce ingredients together until totally smooth with no grainy bits, then pour in to a small saucepan and gently heat for about 10 minutes, until it thickens.
Stir in the mustard and vegan parmesan cheese until melted, then add the drained macaroni.
Stir well, then pour into 1 or 2 ovenproof dishes.
Scatter over the mozzarella and bake for 20-25 minutes until golden and bubbling.
Scatter over the spring onion tops and serve with a small salad.
Cook extra macaroni to make pasta salad for lunches.
