Pizza is a great way to use up vegetables, and with this aubergine one griddled first. It looks quite professional, like its come out of an Italian pizzeria. This Pizza with a salad was more than enough for the 2 of us, but if you wanted to make other flavours for more people just double the dough and tomato recipes.

Home made vegetarian Pizza

Ingredients

For the dough

300g strong white bread flour
75g fine ground semolina flour or strong white bread flour
1/4 tablespoon fine sea salt
1 of 7g sachets dried yeast
1/4 tablespoon caster sugar
200ml lukewarm water

For the tomato sauce

1 clove garlic
Handful of fresh basil or teaspoon of dried
Olive oil
1/2 tin of plum tomatoes
Squirt of tomato puree
Salt and pepper to taste

Topping

1/2 the ball of mozzarella (keep the leftover ball
in a bowl with its water so it doesn’t dry out)
2 handfuls of grated cheese
1 tomato sliced
1/3 Aubergine sliced and griddled
1/4 Red pepper sliced or chopped
Handful of red onion slices
Olives and capers (optional)

Method

Firstly make up your yeast as per packet instructions.

Once the yeast has developed add the rest of the water as per instructions. Add this to the dry ingredients and mix well until a dough is formed. If this is a bit sticky kneed in a bit more flour.

Kneed this for about 10 minutes until smooth and electric, then pop it in a bowl with cling film over the top and set aside in a warm place. Ideally 30-40°C for about 15 minutes.

The dough is now ready to be rolled out and placed on an oiled and floured baking sheet.

We like to sprinkle some course semolina around the edges of the pizza to make a crunchy crust.

To make the sauce

Peel and finely slice the garlic, then cook gently until the garlic starts to turn golden, then add the basil leaves or the dried basil, the tomatoes, the pureé, and a good pinch of salt and pepper.

Cook gently for around 10 minutes, then blend until smooth, have a little taste, and season again if needed.

This is now ready to spread thinly over the base of the pizza, then add a sprinkle of cheese.

Place on the sliced vegetables and add a little more cheese and lastly add little broken up pieces of the mozzarella around the pizza.

Bake in the oven for about 10-15 minutes or until the cheese is melted and golden and the base is cooked.
