Mediterranean spiced pasta

Ingredients Pasta sauce:
3 sausages
2 tablespoons of olive oil
1 onion finely diced
1 roasted pepper finely diced
1 carrot finely diced
1 courgette finely diced
1 clove of garlic crushed
2 teaspoons Greek spice mix
1 tin of chopped tomatoes
Salt and pepper to taste

Ingredients for the Mediterranean spice mix:
1/4 teaspoon nutmeg
1/4 teaspoon coriander seeds
4 cloves
2 cm cinnamon stick
1/4 teaspoon ground ginger
1/4 teaspoon chilli powder
All ground in a spice grinder or with a pestle and mortar

To serve:
With spaghetti pasta, cook extra for pasta salad
Chopped parsley
Parmesan shavings

Method

Pop the sausages out of their skin and divide each in to 4 balls.

Heat the oil in a pan and add the onions and garlic and soften for about 10 minutes. Next add the sausages and cook until browning then add the rest of the vegetables and cook for around 10-15 more minutes.

Next put some water and a good pinch of salt in a large pan and bring to the boil for the spaghetti.

Add the tinned tomatoes and the 2 tablespoons of spice mix (save the rest in a labelled clean jar for another day) and simmer for a further 15 minutes.

Check all the vegetables are soft and season to taste.

When the water has boiled, add the spaghetti and cook following the packet instructions.

Once the pasta is cooked, drain it and add half to the pasta sauce. Give it all a good stir and serve.

Scatter over a little chopped, parsley and parmesan.

The extra pasta can be cooled and made into pasta salad.
