
This is another fish dish we make regularly with any kind of white fish we have knocking around in the freezer. The bacon works really well with the lemon zest and parsley. With the jacket potato and homemade coleslaw you’re well on your way to getting your 5-a-day.

1 large fish defrosted
2 rashers of bacon thinned with a knife
Zest lemon
Handful chopped parsley
1 tablespoon of olive oil
1 large potato
A bowl of homemade coleslaw from day 5
Method
Cook the potato in the oven at 200°C for about 30-40 minutes until soft when you squeeze it. You can start it off in a microwave first to save time.
While this is cooking lay two rashers of bacon on a clean cutting board and stretch out with the back of a knife to thin out. Lay the fish on top and zest a bit of lemon and chopped parsley over it then roll the bacon around it covering the whole fish.
Heat a little olive oil in a frying pan and on a low heat gently fry the bacon fish for a few minutes either side until the bacon starts to crisp up.
If the fish doesn’t look like its cooked you can carry on cooking it in the oven for a few minutes while the potato finishes cooking.
Serve with a buttered jacket potato and the pre-made coleslaw.
