We decided to make this Lasagna in the microwave on the last day of our challenge in case it goes wrong, we’ll just get a take away. I’m a bit sceptical that you can cook it properly, but willing to give it a go. I found a recipe online from America, so had to adapt it a bit.

All that said, when we tasted the Lasagna we were all pleasantly surprised by how nice it was, and we will be doing this one again on our non-challenge weeks. I know the top doesn’t look all golden brown like you would expect a Lasagna to be. But that really didn’t make a difference to the taste. We made a simple salad using the last of the vegetables with a balsamic dressing to go with it. The recipe for this is on Vegetarian Day 6

RECIPE

Lasagna in the microwave

Serves 4

Ingredients

250g Ricotta Cheese
80g frozen Spinach, defrosted and chopped
125g Mozzarella
50g plus 2 Tablespoons Grated Parmesan
salt and black pepper
250g Packet Fresh Lasagna Sheets
430g Jar White Sauce

Method

In a bowl, combine the Ricotta, spinach, most of the mozzarella, half the Parmesan, and pinch of salt and pepper.

In the bottom of a microwave-safe 8-inch square baking dish, spread a layer of the white sauce.

Top the sauce with the lasagna sheets, the white sauce, and the Ricotta mixture.

Repeat until you have used up the ingredients except enough for the last layer.

Top with the remaining lasagna sheets, the white sauce, mozzarella, and Parmesan.

Cover with wax or parchment paper, then a plate. Microwave on high until the lasagna sheets are tender, 15 to 20 minutes.

Serve with a salad and dressing.

We also did another free event in London, we visited the Sky garden in the City, although anyone can visit, you have to book it online first, and can wait a couple of week for a good time slot. It’s well worth a visit just for the fabulous 360° view across London.
