
They said it couldn’t be done, but we proved them wrong. You can eat for £1 a day from Waitrose. It just goes to prove it’s not where you shop but what you buy. Ok we went over budget by 3p each and did have to buy a small amount of extra cheese because we got a bit carried away at the start of the week. But I’m really glad we made it work.
The meals were tasty and reasonably healthy, plenty of salad and vegetables. We even got to have a few sweet treats within the budget too. True it does take a bit more effort to do, but when you see how much you can save, it makes it worthwhile.

We used up the last of the mushrooms to add to the omelette with a few chopped tomatoes. Then garnished with some snips of the chives. Use as many of the eggs you have left. But it should be at least 4.
We serve this with a salad, again we used up the last of the lettuce and cucumber and I made a vinaigrette dressing to go with it.
Salad Dressings
A cheap and easy way to make a salad dressing is to put 3 tablespoons of olive oil to 1 tablespoon of balsamic vinegar. Add a little salt and pepper in a clean, used jam jar, then shake well with the lid on. Taste and add any of the ingredients to your liking.
You can vary this dressing, by adding lemon or orange juice or mustard. It’s so much cheaper than shop bought, and you should have most of these items in your larder. It’ll keep for a week or so in the fridge. Just give it a good shake before using.
