2 person veg £1 shopping list

Updated shopping list August 2018 – £16.29 = £1.16pp per day

This £1 challenge is again for 2 people, but this time I have catered for vegetarians, as I’m not a vegetarian, I hope I’ve got it right. I’m also sure that if you are vegan you could probably substitute the milk, cheeses and butter and still have a go at this weeks recipes, although It would probably cost a little more.

Although we aren’t vegetarian, we do eat a lot less meat than we used to, as until I started doing these challenges I didn’t really know how easy and delicious non-meat foods could be. They rely a lot more on seasonings and flavours. Some of these dishes we make regularly, and some were new to me, but I’m sure we’ll be making them again.

As before I will give you a list of usual stock cupboard ingredients for the weeks meals to check before you go shopping that they haven’t run out.

The list of extra stock cupboard items to check on are, Paprika, ground cumin or cumin seeds, ground coriander, chilli flakes, fennel seeds, mixed dried herbs, tomato purée, lemon juice, olive oil, white wine vinegar, Worcestershire sauce, mayonnaise, ketchup, sweet chili sauce, balsamic vinegar, Pataks Rogan Josh curry paste (although I have a recipe on the blog for this), dried yeast, strong white bread flour, plain flour, fine ground semolina, Olives and capers (optional), tea, coffee and sugar. Most of these ingredients are usual items found in most cupboards, but you’ll use them time and again if you don’t have them, and they’ll last for ages if stored correctly.

I also used Fresh mint, Fresh parsley, Fresh coriander (optional) all from pots in my garden.
