Makes 12

130g peanut butter
75g margarine, softened
125g caster sugar
110g brown soft sugar
2 egg
1/2 teaspoon vanilla extract
125g plain flour
1 teaspoon baking powder
1/4 teaspoon salt


Preheat oven to 180 C / Gas 4 and grease a 23cm square baking tin.

In a medium bowl, cream together peanut butter and margarine.

Gradually blend in the brown soft sugar, caster sugar, eggs and vanilla, mix until fluffy.

Combine flour, baking powder and salt; stir into the peanut butter mixture until blended.

Bake for 30 – 35 minutes in the oven, or until the top springs back when touched.

Cool, and cut into 12 squares.
