Margarita Lime Ice Cream

I love Margaritas but don’t get to drink them very often as we don’t go to many cocktail bars. This Margarita Ice cream recipe made from leftover limes, means I can enjoy them guilt free. Although not too often as there is a lot of cream in them. As this recipe is non-churned you don’t need any specialist equipment so it’s really easy to make.

Margarita (Lime) Ice Cream

Ingredients
125ml lime juice (about 4 limes)
2 tablespoons tequila (optional)
3 tablespoons cointreau (or triple sec) (optional)
150g icing sugar
500ml double cream

Method

Squeeze the limes then add the juice to a large bowl and mix with the tequila, cointreau and icing sugar.

Add the cream and whisk until thick but not stiff.

Pour in to a airtight container and freeze overnight.

I grated the zest from one lime and sprinkled it over the ice cream before freezing.

So simple.
