We used up the last of the Pulled Pork tonight by making it in to a bolognese sauce with our Spaghetti. I would never have thought of cooking pasta in the microwave, but it is possible. Although. I’m not sure if it’s as fuel saving as my other recipes.

Wednesday

Breakfast
Toast or porridge

Lunch
Pulled pork  or cheese salad rolls, melon

Dinner
Spaghetti and tomato and pork bolognese

Snack
Flapjack

RECIPE

1 Courgette finely chopped
1 Clove of Garlic crush
1 Tin Tomatoes chopped and strained
splash of Balsamic Vinegar
1/2 teaspoon of Mix Herbs
1 Tablespoon of Tomato Paste
Leftover Sauce/Gravy from the Pulled Pork
Leftover pork
3/4 of a packet of Spaghetti broken in half
Splash of Oil
Salt and Pepper to season

 

Method

First we cooked the courgette, herbs and garlic in a little oil for 7-9 minutes in the microwave until soft.

We added the tin tomatoes, Balsamic vinegar, Gravy and tomato paste and cooked for a further 5 minutes.

Then  added the meat and seasoned the sauce. and heated for a further 2 minutes to make sure it was piping hot.

Then we boiled a kettle and poured this into a large microwavable bowl with a little salt. To this we added the broken spaghetti and microwaved it for 10 minutes, until soft. Which ever pasta you use, when you microwave it, you’ll need to add 2 more minutes than the packet instruction for boiling.

After the pasta was cooked and drained, we gave the sauce another minute to warm through and served it with some cheese sprinkle on top.
