
To celebrate Waitangi Day in New Zealand, I decided to make a Pavlova. A great recipe for using up your egg whites.
The signing of the treaty happened in the Bay of Islands, near the top of the North Island in a place called Waitangi. As we have family out there we took a trip there a few years ago, and it’s a beautiful place to visit.

RECIPE
Pavlova
2 Free Range Eggs Large – 38p
100g sugar – 15p
Pinch of Salt – 1p
Seasonal Fruit ?
These prices are an estimate and total 54p + fruit
Method
Preheat the oven to 150°C / Gas Mark 2.
Put the egg whites into a large, clean bowl and beat with a handheld electric whisk until they hold stiff peaks. Gradually add the sugar and pinch of salt, whisking constantly, until the mixture becomes thick and glossy.
Spoon or pipe the meringue on greaseproof paper on a baking tray, then bake for about 1 hour or until the meringue is golden.
When the Meringue is cooled, whip some double cream and decorate the top with it and some fresh fruit. I used Kiwis, keeping to the New Zealand theme.
