Even though it’s not that summery today, we are craving summer salads, I think it’s probably because we’ve eaten meat every day so far this week. Although this dish has chicken, it’s only a small amount as a topping so still feels like I’m being healthy. Although the home made croutons feel less healthy although taste so much better than those awful packet ones from the supermarket.

This evening we are running around a lot after work so this is a great quick and easy meal to have when we get in late as it’s so simple to make and tastes great. Even though it’s only a salad it still really fills you up.

Chicken Ceasar Style Salad

Serves 2

Ingredients

2 inches of cucumber sliced into chunks
2 tomatoes diced
1 spring onion sliced
1 gem lettuce sliced
1 carrot thinly sliced
1 slice of pepper chopped
1 crust from your loaf of bread for breadcrumbs
1 chicken breast
1 slice of bread for croutons
1 egg beaten
A handful of flour

Method

Lay your chicken breast on a chopping board between 2 sheets of brown parchment paper, then with a rolling pin hit it quite hard to flatten it out a bit. (About 1cm)

Next put in 3 separate bowl, some flour, a beaten egg and some bread crumbs. Firstly dip the chicken breast in the flour, then next the egg and lastly the breadcrumbs.

Put some oil in a shallow pan and fry the chicken breast when it is hot. A few minutes either side, until the crumb goes a golden brown. You can slice the chicken to make sure it is cooked through, but that is why you bash it thinner.

Remove the chicken and use some kitchen paper to absorb the oil from both the chicken and the croutons.

Cut up your bread crusts and fry in the olive oil and salt it to make the croutons.

Now built up your salad by piling the chopped lettuce on the plate then scatter the cucumber, peppers, carrots, onion and tomatoes, then the sliced breaded chicken, lastly the croutons all drizzled with the homemade Caesar style dressing and some fresh pepper.

Caesar style dressing

Ingredients

1 clove of garlic
75g low-fat natural yogurt
2 tablespoons olive oil
A handful of Parmesan cheese, freshly grated
2 teaspoons Worcestershire sauce
½ A teaspoon of lemon juice
Sea salt
Freshly ground black pepper

To make the dressing, peel and finely chop the garlic. Whisk the yogurt, olive oil, grated Parmesan, Worcestershire sauce, garlic and lemon juice together in a bowl.
