Although this budget food challenge is a bit more than my other £1 a day menus, it’s still packed with delicious healthy meals to enjoy at a tiny price, I thought people would be more encouraged to try this one as it would be easier to manage then the extreme one person £7 for a week food challenge.
A lot of my friends are single at the moment so I designed this budget menu for all the singletons out there. It can be expensive trying to cook for one, so I reuse quite a few of the ingredients so as not to waste food or money. All the recipes should be easy to re-create after a busy day, and if they do take a bit longer to cook than beans on toast it’s because you prepare it then pop it in the oven and leave it to cook while you watch a bit of TV.
Buying for one can be quite expensive as you don’t get any multi buy discounts, so where ever you can save money in these rocky times it’ll help. At the end of these 10 days you’ll still have some staples like rice and pasta leftover so these can be used for the following weeks, just store them in air tight containers to help them last longer.
If you’re not single you can still try these recipes, you just double up the fresh ingredients where needed. It’ll still work out at just over £2 a day each for all three of your meals.
As before there are a few garden herbs or usual stock cupboard ingredients to make sure you have in case you’ve run out. These are; curry powder, Garam Masala, turmeric, flaked almonds (optional), sultanas (optional), olive oil, chilli flakes, balsamic vinegar, salt and pepper, Dijon or wholegrain mustard, paprika, Cajun spice, chilli seeds, cumin seeds, coriander seeds, black peppercorns, ginger, curry paste (optional), soy sauce, 5-spice paste, honey, flour, Jif lemon juice, fresh parsley, fresh coriander
With this weeks challenge I ordered a wonky veg box from the supermarket which was great value. So I decided to make some hearty soups with the extra vegetables for lunches. I made these at the weekend and froze them in takeaway pots so that I could heat them up at work.
I try to do most of the prep work for these challenges at the weekend, like making the curry pastes and sweet treats. This challenge treat was a courgette cake made with the leftover courgettes. The recipe is on the blog under leftover cakes. This time I just made a plain icing though.
